Healthy Eats

Healthy eating can be difficult sometimes. Why do I say that? Everyone has different medical conditions such as arthritis, digestion, gluten intolerance, dry skin, bowel issues, and asthma just to name a few. Well you have to think about the foods you eat, and how it relates to your medical issues. Certain foods can cause an allergic reaction. There are meats that can be rough on your system and you may not be able to digest. Well we all know most restaurants serve unhealthy foods. There are not enough food chains that focus on health conditions. The lovely matter of it all is when you prepare your food from home you control the situation at hand. I prepared this meal tonite at home. It was healthy and delicious.

Chicken Black Bean Enchilada Skillet                     


Rotel (Mild)(1 can)

Enchilada Sauce (Mild)(1 can)

Black Beans (1 can)

4 thin chicken breast (cut in squares)

Corn tortillas (6 cut in squares)

Colby Jack Cheese (1 cup)

Mozzarella Cheese (1/2 cup)

Green Onions (2)

Cast Iron Skillet
